RICOTTA TOAST
Yield: 1 serving
Whole Wheat Bread, 2 slices
1/2 cup reduced-fat ricotta cheese
Grapes, Green Seedless, 1/2 cup
Honey, Drizzle
Toast 2 slices of bread. Spread each slice with the reduced-fat or fat-free ricotta. Cut the grapes in 1/2 and put on top of the toast. Drizzle with a bit of honey. Enjoy.
*** This toast can also be topped with figs, pears or fresh berries instead of grapes.

Hummus is one of my favorite dishes, which can be made in minutes. Use it as a dip or spread it on some whole wheat bread and top off with a slice of avocado to have an enjoyable and filling lunch.
Chickpeas, 2 cans + about 1/4 cup of liquid reserved from the cans (otherwise the hummus will be too dry)
Sesame Tahini, 1/2 cup
Garlic, 3 Cloves
Olive Oil, 1/4 Tbsp
Paprika, 1 pinch
White Pepper, 1 Tbsp
Salt, 1 tsp (or to taste)
Lemon Juice, 3 Tbsp
***To make your hummus extra special, add ALEPPO PEPPER to taste. I have not been able to find it in any local stores. It can, however, be ordered online. Aleppo pepper adds an amazing flavor to hummus and many other dishes.
Mix all the ingredients in a bowl and blend with a hand-held blender. Garnish with olives, pine nuts, parsley…or nothing at all. ENJOY!
NOTE: If you do not have a hand-held blender, a regular one can be used instead.
